Sausage & bean casserole

Sausage and bean casserole

Who doesn’t like sausages? And yes, this is equally as tasty with veggie sausages or meatballs. This is originally from Tesco magazine and is always a winner with my toddler (although she often picks out the greens. You can’t win them all!).

  • Cook the sausages in a nonstick casserole dish in little olive oil over a medium / high heat until browned all over, then remove from the pan and save for later.
  • Finely chop an onion, 1 celery stick, 1 carrot and 2 cloves of garlic and cook in the casserole dish for around 10 minutes until softened. Return the sausages to the dish along with a can of chopped tomatoes, 400ml of stock (chicken or vegetable), a teaspoon of smoked paprika and season lightly.
  • Bring to the boil then reduce to a simmer and cook for 20 minutes until the sausages are cooked through and the sauce thickened. Add a can of cannellini beans (drained and rinsed) and 100g sliced spring greens or spinach to the dish and cover with a lid. Cook for a few minutes more until the greens have wilted.

This is a meal in itself but I see nothing wrong with serving with some fresh crusty bread to mop up all the sauce. Nom nom!
