
Who doesn’t like sausages? And yes, this is equally as tasty with veggie sausages or meatballs. This is originally from Tesco magazine and is always a winner with my toddler (although she often picks out the greens. You can’t win them all!).
- Cook the sausages in a nonstick casserole dish in little olive oil over a medium / high heat until browned all over, then remove from the pan and save for later.
- Finely chop an onion, 1 celery stick, 1 carrot and 2 cloves of garlic and cook in the casserole dish for around 10 minutes until softened. Return the sausages to the dish along with a can of chopped tomatoes, 400ml of stock (chicken or vegetable), a teaspoon of smoked paprika and season lightly.
- Bring to the boil then reduce to a simmer and cook for 20 minutes until the sausages are cooked through and the sauce thickened. Add a can of cannellini beans (drained and rinsed) and 100g sliced spring greens or spinach to the dish and cover with a lid. Cook for a few minutes more until the greens have wilted.
This is a meal in itself but I see nothing wrong with serving with some fresh crusty bread to mop up all the sauce. Nom nom!
